View Full Version : Chicken Breast Salad for One with Pineapple Vinaigrette

Ingredients:
Vinaigrette (makes about 1 cup):
1/2 cup crushed pineapple
1/4 cup chopped yellow bell pepper
3 tablespoons rice vinegar
1 teaspoon minced Serrano
1/4 teaspoon ground curry powder
1/4 teaspoon ground white pepper
1 tablespoon olive oil
Salad:
2 cups mixed greens
1/4 cup cucumber slices
2 tablespoons chopped red onion
1 chicken breast half, sliced
2 tablespoons toasted sliced almonds
Directions:
1. Place vinaigrette ingredients in food processor (http://sheknows.com/about/look/6928.htm#) or blender and process until smooth.
2. Transfer to cruet or resealable container. Place mixed greens on dinner plate or large salad bowl. 3. Fan cucumber slices and chopped onion around edges.

4. Lay slices of chicken breast in center of greens and sprinkle with almonds.
5. Drizzle with vinaigrette and serve with slice of crusty bread.

ooo, sounds really good... Wish that I had all those ingredients with me right now so I could whip it up.

Only question is if all those ingredients are really all that healthy for a runner.
